SMELL
A comforting and harmonious scent pervades the nostrils with notes of honey and red fruit, the hint of smoke arrives gently bringing with it notes of toasted walnuts and almonds, the evolution leads to hints of vanilla, mountain hay and incense, always full and enveloping combines its scents with a seductive elegance.
TASTE
Red fruit and vanilla play with the smoke as a frame, the memory takes us to winter mountain fires and the second sip opens the curtain to toasted notes, roasted chestnuts and marshmallows.
Hints of caramel emerge which are immediately refreshed by green notes that recall smoked pepper, the broad evolution in the glass brings notes of honey and candied peaches. Surprising finish with notes of coffee, licorice and chocolate.

Matthew is an assembly of barrels of different ages, in jargon a NAS (No Age Statement), we worked for over a year on studying the recipe and the objective was to create an elegant, complex and extremely pleasant to drink line of taste that combined the refined character of Scotch with the freshness of Irish. What is really important to us is the taste, regardless of the age a whiskey may have.

Matthew Black Tie is composed of peated single malt and single grain, for the peated part we preferred triple distillation in order to make the smoky note gentler and lighter while the Single Grain gives fresh and balsamic hints that go perfectly with the light memory of smoke.

It depends on your tastes and what you want at a given moment. Drinking it in purity allows you to appreciate all its complexity and evolution which can last even more than an hour, particularly recommended for lovers of the spirit and for those with a more expert palate. Matthew on the rocks is perfect for any coin and for any palate, a fresh and complex drink for a true connoisseur.

In our opinion, the real determining factor in the success of good aging is the quality of the wood and its freshness, we prefer to refine the whiskey for fewer years in an excellent barrel still full of aromas rather than a long aging in an empty barrel which now has nothing left to give to the distillate.

What are the best combinations?
Our favorites are a good dark chocolate, a raspberry granita or a mature blue cheese but the most important thing is time, you need to match the aftertastes and never have the whiskey and the dish in your mouth at the same time because otherwise it would only be perceived alcohol, always wait a few seconds between a sip and a bite. However, the rule reigns that there are no limits to curiosity so our advice is to experiment and let us know!
