COUSINE COLLECTION - 2023
The new single cask collection by MATTHEW'S DREAM is a tribute to cooking in its most authentic and profound conception. Four great chefs who, with their passion and their ideas, have traced a new path in the history of Italian cuisine are the inspiration of four great whiskeys personally selected by us, Marco and Federico, during our travels in Scotland and Ireland. Each whiskey is different in terms of production and aging techniques, but they have in common their ability to amaze and enchant anyone lucky enough to try them. We have chosen chefs who have a direct, genuine, true and pure cuisine, few frills and a lot of substance just as only our whiskeys can be. Diego Rossi for his vision, Juri Chiotti for his radicalism, Jacopo Ticchi for his dreams and Jacopo Mercuro for his will. This collection is like them, it looks to the future. Because a great chef is like a great whisky, the fruit of a process lasting many years that contains tomorrow.
ATELIER - 2022
Atelier is the new collection by Dream Whisky, we were inspired by the world of fashion and tailoring boutiques that sew tailor-made clothes with attention to the smallest details, from fabrics to shapes, giving the client the emotion of wearing a garment that represents him entirely.
Women's names and dazzling dresses will represent our single casks, time and the barrel are interpreted as a tailoring laboratory that tailors perfumes and flavors to the whiskey, ensuring that each bottle is different and unique like a dress worn for adults occasions.
CREATIVE BLEND #2 - 2022
Creative Blend is a limited collection of unique and revolutionary whiskeys, each edition will present a new and always different recipe in order to build an original series of Blend American Whiskeys over time.

An assembly of 5 carefully selected barrels from the famous Death's Door distillery in Wisconsin, now closed and destined to become an icon of the contemporary history of American whiskey.
The first blend that combines different whiskeys produced with ancient grains and innovative distillation techniques.
An unprecedented whiskey with a modern conception, specifically designed to give character and complexity to the great blending classics as well as to be tasted in purity.
AMERICAN OAK SERIES 2 - 2022
American Oak is a project born from the meeting of two realities that have made research and excellence the basis on which to base their activities: Dream Whiskey and Jerry Thomas Project.
The aim of uniting a selector and bottler of noble spirits with one of the founding fathers of the American bar in Italy has the aim of bringing American whiskey to the light it deserves, starting from its roots.
American Oak was born with the desire to present single casks of American whiskey starting from the colonial origins that brought distillation to the new world.
Recipes dating back to the pre-prohibition era, experimental distillation techniques, research on raw materials grown on site and therefore re-evaluated, will over time create a path that aims to explore American whiskey as you have never seen it before. Enjoyed in purity.

The ambitious project includes bottlings of single cask whiskey every year, innovative and interactive tasting formats, the dissemination of information material on the culture and history of this distillate and above all a careful look at new trends in the spirit overseas.
SHADES - 2021
We have decided to dedicate this collection to the soft and deep colors of Scotland , each of us has chosen the color that best represents him and by which he was most impressed the first time he crossed this wonderful land.
The Scottish landscapes therefore created our colours. The stormy sea of the islands , the green valleys and the barley fields welcome us on all our journeys, we sampled the shades and using the concept of nuance as a key to understanding, three paintings were born that will remain sculpted over time.

MATERIAE was born from the union of Alvise Ennas and Dream Whisky .
Our desire is to bring to light great spirits , where unique raw materials express their deepest and most authentic soul. The strong passion that moves us for our work guides us on a journey to discover emotions , sensations and lost memories.
The love for artisanal distillation leads us to search for forgotten fruits , ancient cereals and characteristic terroirs that tell us their essence .
METAMORPHOSIS - 2020
Whiskey is Metamorphosis.
Spirit is born, the barrel is its cocoon and here it interacts with time, space and territory.
It takes on color, develops its aromas and creates its character.
Like the flapping of a butterfly's wings it brings us the emotion of its Metamorphosis.
FIRST COLLECTION - 2019
The bottlings are Dream's flagship and with them we want to convey everything that whiskey and Scottish nature are capable of expressing. We travel throughout Scotland in search of those barrels that reflect our idea of harmony and uniqueness of taste. After selecting them, we decide whether they are ready to be bottled or whether they must continue their aging in traditional warehouses. Once ready, each barrel is bottled individually and with the appropriate alcohol content in order to best express the aromatic and sensorial complexity of the whisky.
To make our mission clear we decided to create an unconventional label: No name of the distillery, but only a hand-made drawing, characterized by different elements, which represent the olfactory and sensorial characteristics of the reference whiskey and an animal that instead it is intended to symbolize the distillery from which we selected it.
