Fireplace comes from a careful selection of casks containing Single Malts of different vintages, with which the Master Blender has managed to recreate a whiskey of great complexity and elegance.

100% Irish barley whisky

A Single Malt Irish Whiskey that combines two traditional techniques, double and triple Pot Still distillation. Exclusive use of first fill ex-Bourbon and ex-Sherry barrels.

Matthew Fireplace is composed of peated and non-peated Single Malt: the non-peated part was distilled with double distillation in order to maintain a more important character and body, rich in aromas.
For the peated part, however, we preferred triple distillation in order to make the smoky note gentler and lighter, as if it were a thin veil of smoke that is almost imperceptible but which gives depth to the tasting.

The quality of the wood and its freshness are the real determining factor in the success of good aging: we prefer to refine the whiskey for fewer years inside an excellent barrel still full of aromas rather than a long aging in an empty barrel which is now it has nothing left to give to the distillate.

SMELL

1. Principle

Notes of pear and green apple chase aromas of jasmine flowers and yellow roses.

2. Evolution

The olfactory evolution leads to hints of red fruit, fresh black cherries and litchi.

3. Final

The long finish recalls the scent of leather and refined skins.

TASTE

1. Principle

The entrance immediately leads to notes of fresh fruit such as white peach and raspberries with great coherence between nose and mouth.

2. Evolution

A sweet sense of peat emerges from the second sip combined with notes of lime honey and white chocolate.

3. Final

Intense finish reminiscent of cocoa and mascarpone with a light note of coffee.

Matthew is an assembly of barrels of different ages, in jargon a NAS (No Age Statement), we worked for over a year on studying the recipe and the objective was to create an elegant, complex and extremely pleasant to drink line of taste that combined the refined character of Scotch with the freshness of Irish. What is really important to us is the taste, regardless of the age a whiskey may have.

Is it better to drink it neat or with ice?

It depends on your tastes and what you want at a given moment. Drinking it in purity allows you to appreciate all its complexity and evolution which can last even more than an hour, particularly recommended for lovers of the spirit and for those with a more expert palate. Matthew on the rocks is perfect for any coin and for any palate, a fresh and complex drink for a true connoisseur.

What are the best combinations?

Our favorites are a good cream ice cream or zabaglione and a mature stracchino type cheese but the most important thing is time, you need to match the aftertastes and never have the whiskey and the dish in your mouth at the same time because otherwise you would only perceive alcohol , always wait a few seconds between a sip and a bite. However, the rule reigns that there are no limits to curiosity so our advice is to experiment and let us know!
